How Haritaki Is Made: Why Grinding Temperature Matters (and Why One Acid Doesn't Tell the Story)

Customers are starting to ask us two questions we welcome: How is your haritaki processed? and Is it heat-treated? Both deserve a straight answer, so here is exactly how a Kailash Herbals capsule comes to exist — and what "cold-processed" does and doesn't mean.

Step 1: Harvest and sun-drying

Haritaki fruit is harvested from Terminalia chebula trees in the Himalayan foothills and dried the way it has been for centuries — in open air and sun. The dried fruit is hard, wrinkled, and shelf-stable. This is the raw material Ayurveda describes; it is not a processed ingredient.

Step 2: De-seeding and sorting

The stone is removed and the fruit flesh is sorted by hand for quality. Damaged or discoloured fruit is rejected.

Step 3: Low-temperature grinding

This is the step people mean when they say "cold-processed." Grinding generates friction heat, and in a high-speed industrial mill that heat can climb well above the point where delicate plant compounds begin to change. Our manufacturer grinds at low temperature, controlling mill speed and duration so the powder never experiences a thermal step.

Why does this matter? Haritaki's signature constituents are hydrolysable tannins — chebulagic acid, chebulinic acid, chebulic acid, corilagin, gallic and ellagic acids. As a class, hydrolysable tannins are sensitive to heat and moisture; sustained heating can break them down into smaller fragments. Low-temperature grinding keeps the fruit's natural tannin profile as close as possible to what was on the tree.

Step 4: Encapsulation and testing

The powder is encapsulated in a GMP-certified facility and tested for identity, heavy metals, and microbial safety. Nothing is added: no fillers, flow agents, or extracts.

What "cold-processed" does NOT mean

It does not mean the powder is "raw" in the sense of undried fruit, and it does not mean every capsule contains an identical percentage of any one compound. Here's why that second point matters.

Why one acid doesn't tell the story

Some sellers have started advertising a high chebulic acid percentage as the measure of haritaki quality. Three things are worth knowing:

  1. Chebulic acid is one of dozens of active constituents. The fruit contains a broad spectrum of tannins, polyphenols, triterpenoids, and other compounds. Picking one and calling it "the" active is a marketing simplification, not a scientific finding.
  2. Natural fruit varies. Chebulic acid content changes with ripeness at harvest, growing region, altitude, and season. Two whole-fruit batches can differ meaningfully and both be entirely normal. A guaranteed constant percentage generally means the product has been adjusted after the fact — which is the definition of an extract, not a fruit.
  3. Ratios matter more than any single number. Chebulic acid does not act alone; it exists within the tannin complex of the fruit. Preserving that whole complex is exactly what low-temperature, whole-fruit processing is designed to do.

What we can tell you honestly

Our haritaki is whole fruit, ground at low temperature, with no extraction and no additives. Independent testing of representative batches shows chebulic acid within the range expected for whole dried Terminalia chebula. We don't test every batch for chebulic acid, because doing so would add cost without changing the product — the fruit is what it is, and that natural variation is a feature of a real fruit, not a defect.

That's the whole process. If a vendor cannot describe theirs in similar detail — solvent, temperature, what's removed, what's added — that's a more useful question to ask than "what's your percentage?"
